Kid-Friendly Recipes

We're sharing our kids' favorite recipes this week!

Cheese Quesadillas (from Sandra)
Some of you may think, "Who doesn't know how to make quesadillas?" but now that we live in Pennsylvania, I realize not everyone eats as much Tex-Mex as those of us with Texas roots do. So here's our easy version of quesadillas!

(I'll give you the recipe for just a cheese quesadilla, but we also fill ours with chicken, spinach, black beans, ham, or turkey.)

Heat 2 Tbs of olive oil (or other oil) over medium heat in a skillet. Place a tortilla (whole grain is best for the kids) in the skillet when the oil is heated. Sprinkle with cheese (we use cheddar when making them plain, but other kinds when we add something else). When the cheese melts, fold over into a half moon shape. Continue to cook and flip until it is light brown and crunchy.

Hot Chocolate Mix (Alicia)
I like to make two recipes of this, but don't try to mix them together unless you have the world's biggest bowl and spoon. It's too big. This will keep in an air-tight container all winter.

3 c. powdered sugar
1 c. unsweetened cocoa
1 c. coffee creamer
1 t. salt
5 1/3 c. dry milk (This is 4 standard sized packets.)

Mix well. Measure 1/3 cup of mixture into a mug. Add hot water. (And marshmallows!)
